Chef Antimo from Estro hails from Naples and pays homage to his ancestors and childhood whilst elevating Neapolitan cuisine using modern cooking techniques. He creates dishes as an ode to his memories, and sometimes the memories revive in the process. His passion for supporting local regenerative farming was on display with the speech he gave to his team prior to Estro’s opening.
